I was looking for a different way to use some strawberries in a dessert and came across this Strawberry and Coconut Upside-Down Cake blog’s recipe.
I am pretty sure that everyone remembers the classic and popular upside-down pineapple cake, right?
When I found this other exotic version with strawberries and coconut, I was curious to taste it. In the end, I am glad I did, and my family is too!
This Strawberry and Coconut Upside-Down Cake came out delicious and made a perfect treat for summertime. Sweet juicy strawberries and crunchy nutty coconut on the inside and the outside harmonize very nicely with this cake. The cake is moist, not too sweet, and I can’t resist going for a second slice…

I made this cake twice. On my first attempt, I did not have enough batter to fill my mold so my cake was a little too thin. The second time, I adjusted the proportion of the ingredients in the batter and it turned out perfect.
For the topping, I decided to toast some coconut with a little bit of sugar and added lime zest. This gives a little crunchiness and freshness to the cake π

Strawberry and Coconut Upside-Down Cake ππ₯₯
Equipment
- 9-inch round cake pan
Ingredients
- 400 g strawberry (14 oz)
- 30 g cane sugar
- 150 g sugar
- 150 g butter
- 75 g coconut shredded (unsweetened)
- 90 g all purpose flour
- 3 eggs
- 1.5 teaspoon baking powder
For the topping:
- 20 g coconut shredded (unsweetened)
- Β½ teaspoon lime zest organic
- 2-3 pinch sugar
Instructions
- Preheat oven at 355 F. Butter a round cake pan (9-inches diameter) well. Evenly sprinkle the cane sugar. Set aside.
- Trim the strawberries and cut them in half.
- Cover the whole pan with the cut strawberries. Place the cut strawberries face down in a circle on the bottom with the largest part of the strawberry against the rim.
- In a small bowl, mix coconut, all-purpose flour, and baking powder.
- Beat the butter and sugar with a stand or hand mixer until well-combined and the mixture becomes creamy.
- Add the eggs one at a time, scraping down the sides of the bowl and beating well after each addition.
- Mix in the flour mixture just enough to blend the flour (do not overmix). Scrape the bowl if needed.
- Cover the strawberries with the batter. Use a spoon to evenly spread the batter.
- Bake in the oven for 35 minutes or until a toothpick inserted in the center comes out clean.Β
- Meanwhile, in a small bowl mix the coconut and sugar. Toast until lightly brown in a small skillet. Add the lime zest, mix, and set aside.
- Before removing the cake from the mold, let it cool for 15-20 minutes on a wire rack. Run a knife around the edges of the pan and place a serving dish or plate on top. Invert the cake onto the serving dish and carefully remove the pan.
- Let the cake completely cool down before sprinkling the coconut all over the cake and slicing.

Hope you and your family have been well during these from Covi d time. Wouldn’t the cake be prettier if the rounded side of the strawberries were down in the pan? Have you tried this orientation & it did not work. Please advise.

I did not try to put the strawberries’ rounded side on the top because, in my opinion, I think the strawberries will be less stable when you cover them with the batter. I chose the easy way and the coconut hides a little bit of the strawberries so it does not bother too much visually. But Feel free to try your version and let me know how it was? We are doing well thank you!
