I was looking for a different way to use some strawberries in a dessert and came across this Strawberry and Coconut Upside-Down Cake blog’s recipe.

I am pretty sure that everyone remembers the classic and popular upside-down pineapple cake, right?

When I found this other exotic version with strawberries and coconut, I was curious to taste it. In the end, I am glad I did, and my family is too!

This Strawberry and Coconut Upside-Down Cake came out delicious and made a perfect treat for summertime. Sweet juicy strawberries and crunchy nutty coconut on the inside and the outside harmonize very nicely with this cake. The cake is moist, not too sweet, and I can’t resist going for a second slice…

    Strawberry Coconut Upside Down Cake

I made this cake twice. On my first attempt, I did not have enough batter to fill my mold so my cake was a little too thin. The second time, I adjusted the proportion of the ingredients in the batter and it turned out perfect.

For the topping, I decided to toast some coconut with a little bit of sugar and added lime zest. This gives a little crunchiness and freshness to the cake 😋

Give this cake a try and let me know what you think!

    • Before removing the cake from the mold, let it cool for 15-20 minutes on a wire rack. Run a knife around the edges of the pan and place a serving dish or plate on top. Invert the cake onto the serving dish and carefully remove the pan.

      Francois,

Hope you and your family have been well during these from Covi d time. Wouldn’t the cake be prettier if the rounded side of the strawberries were down in the pan? Have you tried this orientation & it did not work. Please advise.

      Thank you

        Hi, Mike,

I did not try to put the strawberries’ rounded side on the top because, in my opinion, I think the strawberries will be less stable when you cover them with the batter. I chose the easy way and the coconut hides a little bit of the strawberries so it does not bother too much visually. But Feel free to try your version and let me know how it was? We are doing well thank you!
